Bertha Hamilton's Raspberry Muffins
Ingredients:
1/2 cup sugar 1 tsp. salt
3 tbsp. shortening 3/4 cup sour milk*
1 egg 1 cup raspberries
1-1/2 cups flour * Substitute scant 3/4 cup milk plus
1 tsp. soda 1 tbsp. white vinegar or lemon juice
Preparation:
1. Cream shortening and sugar. Add egg.
2. Mix dry ingedients.
3. Add dry ingredients to egg mixture alternating with milk. Mix well.
4. Fold in raspberries.
5. Fill greased muffin tine 2/3 full.
6. Bake at 350o for 30 minutes.
Makes 1 dozen muffins.
